Granola is one of those things that – once you get into the groove of making it at home – you’ll never go for the store-bought stuff again! It’s tastier and also healthier, with whole rolled oats, plenty of nuts and less sugar. Here’s my go-to recipe…

INGREDIENTS

Dry ingredients:
Mixed nuts (I recommend three types – I used cashews, almonds and pecans)
Mixed seeds (I had a blend of sunflower and pumpkin seeds)
Whole rolled oats (rich in fibre and slow-release energy)
Ground nutmeg
Ground cinnamon
Cocoa powder
Salt (to balance the sweetness)
Wet ingredients:
Coconut oil (or any other neutral plant oil)
Maple syrup (or a simple sugar syrup)
TIPS
This is a super easy recipe; all you need to do is mix the wet ingredients and the dry ingredients separately, add them together and spread them over a large sheet tray so everything is exposed to the heat. You then just need to slowly bake the granola ingredients to release the sweetness of the nuts (which, in turn, will make your house smell amazing!) Just keep an eye on it so that they don’t burn. If your oven heats up a little unevenly, you’ll probably burn a couple and need to pick them out afterwards…




In terms of serving suggestions, I love having this with fruit and yoghurt. If you’re watching your calorie intake, I recommend halving the quantities below and primarily using this as a ‘sprinkle over’ topping to get your sweet fix. This can be stored in an airtight jar at room temperature for up to a week, though it rarely lasts that long in my home!
Nutty Cocoa Granola
A healthier granola recipe with cocoa, oats and nuts
Ingredients
- 3 cups of mixed nuts (e.g. 1 cup each of pecans, almonds and cashews)
- 2 and 1/2 cups of whole rolled oats
- 1/2 a cup of mixed seeds (e.g. pumpkin and sunflower)
- 1 tsp of ground nutmeg
- 1 tsp of cinnamon
- 2 tsps of cocoa powder
- a pinch of salt
- 1/2 a cup of maple syrup
- 1/2 a cup of coconut oil (melted)
Directions
- Preheat the oven to 160C
- In two separate bowls, mix together the dry ingredients and the wet ingredients respectively
- Add the wet ingredients to the dry ingredients and mix to combine so all the nuts, seeds and oats are coated in the syrup-oil mixture
- Take a large sheet pan and line it with greaseproof paper – spread your granola evenly across it
- Bake for 25-30 minutes (stirring halfway through), ensuring you check on it regularly after the 20 minute mark to avoid burning
- Allow to cool before serving or storing
