A viral recipe for baked feta pasta has been making the rounds on TikTok, and I can see why: the ingredients pack some serious flavour and the ‘set it and forget it’ method make this a quick and easy weeknight option. But I think we can do a couple of tweaks to make it even better (at least for my personal preferences), so here’s my version of it…

INGREDIENTS

To bake:
Cherry tomatoes (plum will also work – I don’t recommend using large varieties as they will lack sweetness)
Feta cheese
Garlic
Everything else:
Fusilli (Penne, Rigatoni or Casarecce would also work)
Oregano
Fresh parsley (optional)
TIPS


This is a super simple recipe; just use quality ingredients, because it’s pretty minimal in terms of added extras. I personally don’t think that just plonking the pasta into part-melted feta looks very appealing, which is why I’ve blended the sauce and added creaminess by using the pasta water as an emulsifier. I’ve also added a small head of garlic, which isn’t going to taste overly garlicky once it’s roasted off a little – it won’t get super creamy with this cook time but it’s in there long enough to take off the edge!


Viral Baked Feta Pasta
A tangy, creamy pasta dish that's perfect for weeknight dinners
Ingredients

250g of cherry tomatoes
- 200g of feta cheese
- 1 small bulb of garlic
- 1 tsp of dried oregano
- 250g of fusilli
- A small handful (c. 5g) of fresh parsley (remove large stems and chop)
- Plenty of olive oil
- Salt and pepper to taste
Directions
- Preheat the oven to 170C
- Slice the top off the garlic so each clove is exposed, place it on a small piece of foil, season with salt and pepper, add a drizzle of olive oil and wrap into a little package
- To an oven dish, add the tomatoes and block of feta, sprinkle over the oregano, drizzle with olive oil and season with salt and pepper
- Add the garlic package and oven roast for 20-25 minutes
- Boil the kettle
- When the oven ingredients are halfway through their cooking time, add the boiled water to a pan, salt well and bring to a rolling boil before adding the pasta to cook to al dente (usually around 2 minutes less than the packet instructions)
- Whilst the pasta cooks, when the oven ingredients are ready, remove from the oven and set them aside to cool slightly for 5-10 minutes
- Add the tomatoes and feta to the food processor and pop the garlic cloves out of their skins to add them too
- Blend until smooth, adding a little olive oil if needed and season if required
- Drain the pasta once it’s done but reserve at least 2 cups of the starchy pasta water
- In your pan, add the blended sauce and stir in with the pasta, adding the pasta water in small amounts for a smoother, creamier sauce
- Top with the fresh parsley and a little drizzle of olive oil (both optional) to serve
