Look, not every meal is going to be a nutritional powerhouse! Whilst I don’t mind adding beans and veggies to my pasta and rice dishes more nutritious; sometimes I just want, like, a macaroni cheese with white pasta. And, for these times, it’s nice to have a little salad on the side to keep things balanced whilst enjoying my refined carb dish the way I like it. Likewise, if you enjoy meat every so often, then this can be a great accompaniment. This is a quick, easy but delicious side salad with fresh flavours that can be whipped up in time your pasta takes to cook…

INGREDIENTS

Fresh basil
Fennel
Rocket leaves
Unwaxed lemon
Unwaxed blood oranges
Extra-virgin olive oil (use the good stuff)
TIPS & NOTES

This is a simple recipe, so my only tips are to keep the fennel fronds (the little herby bits at the top of the bulb) and use them as a garnish, and to make sure you cut off all of the white parts from the orange because they add a bitter flavour.

Fennel, Blood Orange & Rocket Side Salad
Simple but delicious; this fresh salad is perfect to go alongside heavier meals
Ingredients
- 1 medium bulb of fennel (cut off the root, cut the body into thin chunks and remove the fronds – roughly chop these)
- 2 medium unwaxed blood orange (carefully cut off the peel and white, retain a littlr juice from the peel and zest the rest, cut the flesh into slices)
- Juice and zest of 1 unwaxed lemon
- 50g of rocket leaves
- 30g of extra-virgin olive oil
- A small handful of fresh basil (stack the leaves on top of each other, roll into a little package and make ribbons by making slices down the short side of the package)
- Salt and pepper to taste
Directions
- Build the dressing by adding the olive oil, lemon juice, dash of blood orange juice, lemon rind, blood orange rind and a luttle salt and pepper – shake together in a jar or whisk together in a small jug
- Toss together the rocket leaves and fennel slices, place the blood orange slices on top, sprinkle over the basil ribbons and drizzle everything with the dressing
