I love having a tasty sauce as part of my weekly meal prep routine; it takes 5 minutes but then it’s ready in my fridge for whatever I want to throw it on. This is a creamy, plant-based sauce with plenty of hidden fibre and a nice bit of protein that instantly levels up whatever I put it on. I put on wraps and sandwiches, I serve roasted veg over it, I drizzle it onto my baked potatoes… the opportunities are endless!

INGREDIENTS

Pre-cooked butter beans (jarred or tinned)
Tahini (sesame paste)
Garlic
Lemon juice
Parsley
Mint (or dill, or coriander)
TIPS & NOTES
This is a really easy recipe, so I only have a couple of notes! I recommend using parsley as a mild herb, but the mint can be swapped for more parsley, or you can replace the mint with coriander, dill or rocket. I wouldn’t recommend basil because it browns so easily! The reason for the flexibility on how much water to use is because tahini does vary in its consistency, so start with a smaller amount and adjust to get this sauce to the desired thickness. Herby Green Bean & Tahini Sauce
A quick and easy sauce to level up your lunches and dinners
Ingredients
- 230g of butter beans (drained and rinsed)
- 60g of tahini
- 12g of fresh parsley
- 8g of fresh mint (remove large stems)
- 1 clove of garlic
- Juice of 1 lemon
- Salt and pepper to taste
Directions
- Add all of the ingredients to a blender with 1/4-1/2 of very cold water
- Blend until the sauce reaches the desired consistency (adjust with additional water, if needed)
- Add to a jar and refrigerate or enjoy right away
