I don’t tend to go for fussy desserts; banana bread is about as far as my cake-baking skills go! I love a simple dark chocolate bar but sometimes it’s nice to elevate it. This quick, easy and healthy recipe (each square contains 2g of fibre) has been in my rotation every week lately…

INGREDIENTS

Dark chocolate
Cashew butter (I also do this with almond butter, but any nut butter will work)
Medjool dates (of ethical origin)
Pecans (almonds are a cheaper alternative)
Pistachios (cashews are a cheaper alternative)

This is a quick and easy recipe; if you don’t have much freezer space, you can let this set in the fridge overnight. I let it set for 1 hour in the freezer before transferring it to the fridge. I recommend toasting the nuts to bring out their natural sweetness and I used a small oven dish to construct this in, but any similar freezer-safe container will work.

Triple Nut Date Bark
A healthy snack with good fats and fibre
Ingredients
- 100g of dark chocolate
- 25g of pecans
- 25g of pistachios
- 50g of cashew butter
- 10-12 Medjool dates (depending on size) (half-cut and stones removed)
Directions
- Boil the kettle
- Take a container, scrunch up some greaseproof paper and line the container with it
- in a frying pan over a low heat, toast the nuts for 3-5 minutes until they’re aromatic, then give them a rough chop
- Smush down the dates (sticky side down) on top of the greaseproof paper
- Fill a saucepan 1/3 full of boiling water and place a correspondingly-sized bowl over the top – bring it to a rolling boil over a medium heat before turning it low and breaking the chocolate squares into the bowl
- Whilst the chocolate melts (this should take around 5-10 mins) pour the cashew butter over the date layer and spread it with a spatula or spoon
- Stir the chocolate if there are any unmelted chunks and allow those to melt before removing from the heat with a heat-proof glove
- Pour the melted chocolate over the cashew later and spread
- Sprinkle over the chopped nuts
- Freeze for 1 hour or refrigerate overnight to set before cutting into 12 chunks
