It’s pumpkin spice season! I personally don’t support Starbucks and I’m generally not someone who drinks syrupy coffees, or even buys coffee out and about very much these days… But, it’s actually super easy to make a pumpkin spice blend yourself, and today we’re making it into a healthier breakfast. Overnight oats are a go-to for me because they take 10 minutes to throw together and offer a healthy, convenient prep-ahead breakfast option.

INGREDIENTS

Oats:
Whole rolled oats (I don’t recommend porridge oats as they can get a little mushy once soaked)
Chia seeds
Pumpkin purée
Water
Greek yoghurt (or a plant-based alternative)
Milk (I used oat)
Maple syrup
Pumpkin spice blend (dried nutmeg, cinnamon, clove and ginger)
Toppings:
Pecans
Pumpkin seeds
Pumpkin seed butter
TIPS & NOTES


This is a simple recipe; just throw together the ingredients and (even if it looks like a lot of liquid to begin with) allow everything to soak and absorb overnight before topping and enjoying it the next day. If you want to prep the whole thing ahead of time, simply add the main mixture to your prep pots, let them sit in the fridge for 10-15 minutes and then top them, so your toppings sit on the surface.
Pumpkin Spice Overnight Oats
A healthy breakfast prep with pumpkin spice flavours
Ingredients
- 65g of whole rolled oats
- 35g of chia seeds
- 55g of Greek yoghurt
- 50g of pumpkin purée
- 20g of maple syrup
- 1 tsp of pumpkin spice (or 1/4 tsp each of dried ginger, nutmeg, cinnamon and clove)
- 100ml of water
- 100ml of milk
- 20g of pecans
- 10g of pumpkin seeds
- 30g of pumpkin seed butter
Directions
- Over a low heat in a small frying pan, lightly toast the pecans and pumpkin seeds until fragrant for around 5 mins
- Combine the oats, chia seeds, pumpkin purée, Greek yoghurt, half of the maple syrup, water and milk in a bowl, once mixed, allow it to sit for 10 mins
- Spoon into two pots and top with the pumpkin seeds, reserved maple syrup, pecans and pumpkin seed butter (alternatively, refrigerate and top before serving)
