I’ve become such a granola obsessive lately, that it only seemed right to add a festive twist to it. And it could be my favourite recipe yet…

INGREDIENTS

Wet:
Coconut oil
Maple syrup
Dry:
Unwaxed orange rind
Apple
Nuts (I used walnuts, almonds and pecans – feel free to swap any in or out)
Seeds (I used pumpkin and sunflower)
Flaxseed (can be omitted but does help to create clusters)
Whole rolled oats
Salt
Festive spice mix (I use nutmeg, cinnamon, clove and ginger)
Additions:
Dried cranberries
Dark chocolate (mine is unsweetened)
TIPS & NOTES







This is a simple recipe but a few tips: firstly, feel free to swap out different kinds of nuts and seeds, but keep the quantity the same because the final granola is dependent on the ratio of wet to dry ingredients. I also really recommend flattening / packing the granola down before baking and then allowing it to cool fully on the baking sheet afterwards. This allows it to form small clusters and then you can throw in the additions.

Festive Spiced Granola
A tasty snack or breakfast granola with a festive twist
Ingredients
- 30g of coconut oil (melted)
- 30g of maple syrup
- 1 medium apple (grated)
- 1 medium unwaxed orange (zested)
- 50g of walnuts (roughly chopped)
- 50g of pecans (roughly chopped)
- 50g of almonds (roughly chopped)
- 30g of pumpkins (roughly chopped)
- 30g of sunflower seeds (roughly chopped)
- 185g of whole rolled oats
- 30g of flaxseed
- 1/4 of a tsp of salt
- 1/4 of a tsp of ground cinnamon
- 1/4 of a tsp of ground nutmeg
- 1/4 of a tsp of ground clove
- 1/4 of a tsp of dried ground ginger
- 40g of dried cranberries
- 40g of dark chocolate chips
Directions
- Preheat the oven to 150C
- Combine the melted coconut oil and maple syrup
- Mix in the apple and orange zest
- Add the walnuts, pecans, almonds, pumpkin seeds, sunflower seeds flaxseed, oats, salt and spices
- Mix to evenly coat the dry ingredients with the wet
- Line a wide sheet pan with greaseproof paper
- Spread the granola mix over the sheet pan, patting down and compacting together so it’s evenly spread
- Bake in the oven for c.25 mins, lower the heat if needed to avoid burning
- Allow the granola to cool on the sheet pan (it will take around 30 mins) before breaking into clusters and adding the dark chocolate
