I haven’t bought granola in years, because it’s so quick, easy and cheap to make at home, plus you can customise the flavours and make the ingredients healthier. This is my current jam…

INGREDIENTS

Sweeteners, oil and flavour:
Coconut oil
Maple syrup
Ripe banana
Vanilla extract
Salt
Nutmeg
Ginger
Cinnamon
Nuts:
Cashew nuts
Walnuts
Seeds and oats:
Sunflower seeds
Pumpkin seeds
Whole rolled oats

I made this portion size with a small banana but I scale the recipe based on the size of overripe banana I have, to be honest! So I do a double portion of the other ingredients if I have a large banana, or a 1.5 portion for a medium banana. You can also use other nuts – I’ve made this with Brazil nuts, pecans, almonds, pistachios… whatever I have to hand is going into the granola!
The most important tip if you want it to be crispy or to make nice clusters is to let it bake uninterrupted then leave it to fully cool on the sheet pan before breaking it into pieces.

Banana Maple Granola
A homemade granola with banana and vanilla
Ingredients
- 1 small banana
- 20g of coconut oil (melted)
- 30g of maple syrup
- 1 tsp of vanilla extract
- 1/2 a tsp of ground cinnamon
- 1/2 a tsp of ginger
- 1/4 of a tsp of nutmeg
- 1/4 of a tsp of salt
- 30g of pumpkin seeds
- 30g of sunflower seeds
- 75g of cashew nuts (roughly chopped)
- 75g of walnuts (roughly chopped)
- 125g of whole rolled oats
Directions
- Preheat the oven to 160C
- Mash the banana into a creamy paste
- Add the melted coconut oil, maple syrup and vanilla extract and mix until fully combined
- Add the pumpkin seeds, sunflower seeds, salt, nutmeg, ginger, cinnamon, cashew nuts, walnuts and whole rolled oats and mix to completely coat the dry ingredients with the wet mixture
- Line a sheet tray with greaseproof paper
- Spread the mixture onto the sheet tray and flatten with a spoon or spatula (leaving no gaps) to create a thin-ish layer
- Bake in the oven for 20 mins, check halfway that nothing is browning too much already (if it is, lower the temperature) – if the granola isn’t quite browned at 20 mins, give it another 5
- Remove the sheet tray from the oven and leave the granola to fully cool undisturbed on the tray (this takes about half an hour) before breaking it into clusters
