Chocolate Mousse with Berries | High-Fibre, Low-FODMAP

This month I’m sharing high-fibre recipes that are also low-FODMAP and today we’re making dessert. It’s delicious, it has 9g of fibre (plus 10g of protein) and you’ll never guess what’s in it…!

INGREDIENTS:

Chocolate mousse:

Silken tofu

Avocado (ideally, slightly less ripe)

Dark chocolate (70% or more)

Cocoa powder

Maple syrup

Chia jam:

Frozen raspberries

Chia seeds

Topping:

Fresh strawberries

TIPS & NOTES

I promise you: this doesn’t taste of avocado, it doesn’t taste of tofu, it tastes like any other chocolate mousse! You’re just going to have to trust me on this one, but my fiancé had no idea what was in this until after he ate it and loved it… I recommend using a slightly less-ripe avocado as that guarantees not getting any flavour from it. If you’re lucky enough to have access to very flavourful and ripe avocados; add an extra tsp of maple syrup and an extra square of chocolate.

An indulgent high-fibre, low-FODMAP chocolate mousse

Blender required, no advance prep needed however 1-2 hours needed to set this in the fridge

Ingredients

  • 1/2 a medium avocado
  • 90g of dark chocolate
  • 200g of silken tofu
  • 10g of cocoa powder
  • 40g of maple syrup
  • 12g of chia seeds
  • 100g of frozen raspberries
  • 100g of fresh strawberries

Directions

  1. Boil the kettle and take a saucepan and a bowl that approximately covers its opening – add the boiling water to the saucepan, put the bowl over the top and set the hob to a medium-low heat – add most of the chocolate (set aside 15-20g to use for topping) and allow it to melt, stirring occasionally
  2. Add the tofu, avocado, maple syrup and melted chocolate to a blender (ideally, high-speed) and blitz until smooth – put this into the refrigerator
  3. Meanwhile, add the raspberries to a small saucepan and cook covered over a low heat for 7-10 mins until they’re broken down and liquid has been released – add the chia seeds and stir to create a jam (add a splash of water, if needed, to loosen) and refrigerate
  4. When the pudding has set, roughly chop the reserved chocolate and cut the strawberries into quarters
  5. Serve the pudding layered with the chia jam and top it with the flaked chocolate and fresh strawberries
