When I want a weeknight one-pot that delivers plenty of plant points, fibre and protein; this is what I like to make…

INGREDIENTS

Vegetables:
Cherry (or baby plum) tomatoes
Tenderstem broccoli
Spinach
Flavour:
Green pesto
Vegetable stock
Lemon juice
Shallot
Everything else:
White beans (I used cannellini)
Orzo
Walnuts
Parmigiano Reggiano (or any Italian hard cheese)

TIPS & NOTES
This comes together in one pot, I just recommend using one that’s non-stick, lidded and relatively shallow for best results.







Veggie Pesto Orzo
A weeknight one-pot that’s healthy and delicious
No special equipment or advance prep needed
Ingredients
- 1 shallot (finely diced)
- 1 400g can of white beans (drained and rinsed)
- 200g of cherry tomatoes
- 75g of spinach (roughly chopped)
- 150g of tenderstem broccoli (roughly chop and separate the stems)
- 1 vegetable stock cube (dissolve in 450g of boiling water immediately before use)
- 30g of red or green pesto
- 225g of orzo
- 50g of Italian hard cheese (finely grated)
- Juice of half a lemon
- 35g of walnuts
- A drizzle of olive oil
- Salt and pepper to taste
Directions
- Optional: lightly toast the walnuts in the pan over a low heat for 5 mins, then roughly chop them
- Drizzle a little olive oil into the pan and increase the heat to medium – add the shallot and sauté with salt and pepper for a couple of mins until fragrant before adding the broccoli stems and sautéing for another couple of mins
- In the meantime, boil the kettle and prepare the vegetable stock
- Add the orzo and toast whilst stirring for 30 seconds before adding the tomatoes and vegetable stock, covering and letting simmer – stir occasionally and the orzo will be cooked when all the water is absorbed (this should take 15-20 mins)
- Add the white beans and spinach, stir and cover to cook for a further couple of mins
- Add the pesto and most of the cheese (save some as a garnish) and stir until the orzo is saucy
- Serve topped with the walnuts and reserved cheese
